Recipe to Share

Monday night, I made one of my favorite dinners for Christopher: Parmesan crusted chicken. I thought that I would share it with you all.

Parmesan-Crusted Chicken

What you need:
2 large eggs
1 cup dried Italian-styled bread crumbs (I never measure this stuff, I just dump onto a plate)
¾ cups freshly grated Parmesan (this either)
4 chicken breasts
Salt and ground black pepper
6 tablespoons olive oil





Whisk the eggs in a pie plate to blend. (I also add a little milk, salt and pepper) Place the bread crumbs in another pie plate. Place the cheese in a third plate.



Sprinkly the chicken with salt and pepper. Coat the chops completely with the cheese, patting to adhere. (dripping a little water on the chicken will help the cheese stick better) Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.

Heat 3 tablespoons of oil in a very large skillet. Over medium heat, cook chicken about 6 minutes per side.





Then transfer chicken to a 350 degree oven to finish them off (I usually cook it for about 15-20 minutes)Cook until golden brown and the center reaches 150 degrees.



We paired our chicken with fresh greene beans, baked potatoes and hot rolls. It was very yummy.



You can also use this recipe on pork chops, works about the same. I make both pretty often.
